Ingredients

  • 15 ounce kidney beans organic rinsed drained canned
  • 15 ounce canned tomatoes crushed undrained canned
  • tablespoon canola oil 
  • tablespoon chili powder 
  • 12 ounce beer dark
  •  garlic clove minced
  • ounce chilis diced green undrained canned
  •  spring onion sliced
  • 12 ounces ground sirloin 
  • 1.5 cups onion chopped
  • teaspoon paprika hot
  • 0.5 cup salsa verde 
  • ounce sharp cheddar cheese shredded

Directions

  1. Heat a large Dutch oven over medium-high heat.
  2. Add oil to pan; swirl to coat.
  3. Add beef; saut for 5 minutes or until no longer pink, stirring to crumble.
  4. Add chopped onion, chili powder, and paprika; saut 4 minutes, stirring occasionally.
  5. Add garlic; saut for 1 minute, stirring constantly.
  6. Stir in beer; bring to a boil. Cook 15 minutes or until liquid almost evaporates.
  7. Add salsa and the next 3 ingredients (through beans); bring to a boil. Reduce heat, and simmer for 30 minutes, stirring occasionally. Ladle 1 1/4 cups chili into each of 4 bowls, and top each serving with 1 tablespoon cheese.
  8. Sprinkle with green onion.
