Ingredients

  • 0.3 cup basil leaves packed
  • rib inner celery with leaves, thinly sliced
  • tablespoons chives snipped
  • pound ciabatta bread for another use, bread cut into 1-inch cubes
  • 0.3 cup optional: dill coarsely chopped
  • 0.5 cup flat-leaf parsley leaves packed
  •  garlic clove 
  • 0.5 cup kalamata olives pitted halved
  • servings kosher salt and pepper freshly ground
  • 2.5 tablespoons juice of lemon fresh
  • 0.8 cup mayonnaise 
  •  oil-packed anchovies drained
  • tablespoon oregano leaves 
  •  piquillo peppers and lengthwise drained quartered
  • pound rotisserie chicken cut

Directions

  1. In a food processor, pulse the anchovies, garlic, parsley, basil, dill and oregano until coarsely chopped.
  2. Add the mayonnaise and lemon juice and process until smooth. Fold in the chives; season with salt and pepper.
  3. In a large bowl, toss the ciabatta with the chicken, piquillo peppers, celery and olives.
  4. Add the dressing and toss to coat. Season with salt and pepper and serve.
