Ingredients

  • fillet anchovy dry tinned rinsed chopped
  •  avocado pitted ripe peeled cut into large pieces
  • servings crudités such as carrots assorted
  • tablespoons basil fresh chopped
  • tablespoons parsley fresh chopped
  • small clove garlic roughly chopped
  • tablespoons juice of lemon 
  • 0.5 cup mayonnaise reduced-fat
  • servings salt and pepper 
  •  scallions light white green sliced
  • 0.5 cup cup heavy whipping cream sour

Directions

  1. Combine avocado, lemon juice, parsley, basil, scallions, garlic and anchovies, if desired, in a food processor. Process, stopping and scraping down sides of bowl as needed, until smooth, with some green flecks remaining.
  2. Add mayonnaise and sour cream. Pulse to blend. Season with salt and pepper.
  3. Transfer dip to a bowl, cover and chill for at least 2 hours. Taste and season with salt and pepper.
  4. Serve with assorted crudits for dipping.
