Ingredients

  • 1.5 tablespoons asian fish sauce 
  • ounce beef jerky asian-style cut into fine julienne
  • small to 3 asian chiles such as bird fresh minced (1-inch)
  • tablespoon galangal fresh minced peeled
  • large garlic cloves minced
  • pound papaya green
  • leaf accompaniment: lettuce soft
  • 4.5 tablespoons juice of lime fresh
  • 1.5 tablespoons sugar 
  • large tomatoes chopped

Directions

  1. Peel and seed papaya.
  2. Cut into large pieces and then julienne.
  3. Combine with tomato, jerky, garlic, chiles, and galangal in a large bowl. Stir together lime juice, fish sauce, and sugar in a small bowl until sugar is dissolved and toss with papaya mixture.
  4. Mound salad on a platter and serve with lettuce leaves for wrapping.
