Ingredients

  • cup breadcrumbs fresh (from 2 bread slices, crusts removed)
  • 20 servings croutons for garnish, optional
  •  cucumber peeled seeded chopped
  • tablespoons parsley fresh chopped
  • tablespoons thyme sprigs fresh
  • cloves garlic crushed
  • pounds tomatoes green husked rinsed coarsely chopped
  • 0.3 cup olive oil 
  • 0.3 cup red wine vinegar 
  • 20 servings pepper black freshly ground
  • teaspoon all the tabasco sauce you handle to taste

Directions

  1. Combine garlic, bread crumbs, vinegar and olive oil in a blender. Pulse until garlic is coarsely chopped.
  2. Add tomatoes, cucumbers, thyme and parsley. Pulse or blend until mixture forms a chunky soup.
  3. Transfer to a large bowl. Stir in 2 cups ice-cold water and season with Tabasco, salt and pepper.
  4. Cover and refrigerate until thoroughly chilled, at least 2 hours.
  5. Serve cold, garnished with croutons, if desired.
