  • cup julienne-cut bell pepper yellow
  • tablespoons fish sauce 
  • 0.3 cup cilantro leaves fresh minced
  • teaspoons ginger fresh minced peeled
  • cup green onions chopped
  • pounds tomatoes green
  • teaspoons ground coriander 
  • tablespoons juice of lime fresh
  • large onion red
  • tablespoon rice vinegar 
  • teaspoons serrano chile minced seeded
  • teaspoon sesame oil 
  • teaspoons vegetable oil

Directions

  1. Cut tomatoes and red onion in half vertically.
  2. Cut each half horizontally into thin slices. Set aside.
  3. Combine cilantro and next 8 ingredients (cilantro through sesame oil) in a large bowl; stir well.
  4. Add tomatoes, red and green onions, and bell pepper; toss well.
  5. Let stand 1 hour.
