  • cup blueberries rinsed drained
  • ounces goat cheese fresh crumbled (goat)
  • tablespoons apricot dried chopped
  • 0.7 cup cranberries dried
  • 0.3 cup olive oil extra virgin plain extra-virgin
  • tablespoons rice vinegar 
  • 12 oz the salad rinsed
  • 10 servings salt and pepper

Directions

  1. In a 2-cup glass measure or small microwave-safe bowl, combine 2 tablespoons cranberries, apricots, and vinegar.
  2. Heat in a microwave oven at full power (100%) until steaming, about 1 minute.
  3. Let stand at room temperature or chill until cool.
  4. In a blender or food processor, whirl fruit mixture until smooth.
  5. Pour pure back into glass measure; add oil and whisk to blend.
  6. Put greens in a wide, shallow bowl.
  7. Add 2/3 of the vinaigrette and mix gently to coat. Scatter cheese, blueberries, and remaining cranberries evenly over greens.
