Ingredients

  • 0.5 teaspoon pepper black divided freshly ground
  • tablespoon capers chopped
  • teaspoons dijon mustard 
  • tablespoons mint leaves fresh finely chopped
  • tablespoon thyme sprigs fresh chopped
  • pint grape tomatoes quartered
  • teaspoon kosher salt divided
  • tablespoons olive oil extra virgin extra-virgin divided
  • small onion red vertically sliced
  • 24 ounce salmon fillet 
  • teaspoons sherry vinegar 
  • pound potatoes - remove skin red

Directions

  1. Place onion in a small bowl; add water to cover.
  2. Let stand for 30 minutes.
  3. Drain. Set aside.
  4. Arrange fish fillets in a single layer on a large plate lined with paper towels.
  5. Let stand, uncovered, in refrigerator for 1 hour (to allow surface to dry).
  6. Preheat grill to medium-high heat.
  7. Place potatoes in a large saucepan. Cover with water to 2 inches above potatoes; bring to a boil. Reduce heat; simmer 15 minutes or until tender.
  8. Drain; cool slightly.
  9. Cut potatoes in half.
