  •  garlic cloves minced
  • 1.5 teaspoons ground cumin 
  • small jalapeno seeded chopped
  • 0.8 cup kiwifruit cubed peeled ( 3 kiwifruit)
  • 0.5 cup juice of lemon fresh ( 4 lemons)
  • tablespoon lemon pepper 
  • 0.5 cup soya sauce low-sodium
  • 0.5 cup mangos peeled chopped
  • 0.8 cup orange sections coarsely chopped
  • 1.5 cups pineapple cubed
  • 0.5 cup onion diced red
  • 0.3 teaspoon salt 
  • 36 ounce chicken breast halves boneless skinless

Equipment

Directions

  1. To prepare chicken, combine the juice, soy sauce, ginger, lemon pepper, and garlic in a large zip-top plastic bag.
  2. Add chicken to bag; seal and shake to coat. Marinate in refrigerator 1 hour, turning once.
  3. Prepare grill or broiler.
  4. Remove chicken from bag; discard marinade.
  5. Place chicken on grill rack or broiler pan coated with cooking spray; cook 5 minutes on each side or until chicken is done.
  6. To prepare salsa, combine pineapple and remaining ingredients, tossing gently.
  7. Serve with chicken.
