  • 0.3 teaspoon pepper black freshly ground
  • 0.5 teaspoon pepper black freshly ground
  • tablespoon capers drained
  • 3.5 pounds chicken thighs 
  • teaspoons olive oil extravirgin
  • tablespoons flat-leaf parsley fresh chopped
  •  garlic clove minced
  •  garlic cloves minced
  • cups grape tomatoes halved
  • tablespoons juice of lemon fresh
  • 0.5 cup onion finely chopped
  • tablespoons onion diced red
  • 0.3 teaspoon salt 
  • 0.5 teaspoon salt 
  • tablespoons citrus champagne vinegar

Directions

  1. To prepare chicken, combine first 3 ingredients in a large zip-top plastic bag.
  2. Add chicken to bag; seal. Marinate in refrigerator 2 hours, turning occasionally.
  3. Prepare grill.
  4. Remove chicken from bag; discard marinade.
  5. Sprinkle chicken evenly with 1/2 teaspoon salt and 1/2 teaspoon pepper.
  6. Place chicken on a grill rack coated with cooking spray; grill 9 minutes on each side or until done.
  7. To prepare salad, combine tomatoes and remaining ingredients in a large bowl; toss well.
  8. Serve with chicken.
