Grilled Corn on the Cob is a simple yet incredibly flavorful side dish that brings the perfect balance of smokiness and zest to your summer meals. With a slight char from the grill and a fresh pesto-like topping made from cilantro, lime, garlic, and olive oil, this dish is both refreshing and satisfying. Whether you're hosting a backyard BBQ or just looking for a quick, healthy side, this recipe will certainly impress your guests.

What makes this grilled corn so special is the unique pesto that coats each ear. The combination of cilantro, lime juice, garlic, and freshly ground black pepper adds a burst of flavor that perfectly complements the natural sweetness of the corn. The light char from grilling gives the corn a smoky depth, and a sprinkle of fleur de sel and a squeeze of lime at the end elevates the taste to another level.

Perfect for vegetarians and gluten-free eaters alike, this dish is a crowd-pleaser that fits seamlessly into any summer gathering. The corn stays juicy and tender inside its husk while developing a crispy exterior from the grill. Serve it up with some butter on the side and extra lime wedges for those who love a little extra zing. It's a simple recipe with incredible flavor that will leave everyone wanting more!

Ingredients

  • 0.5 cup cilantro leaves
  •  ears corn
  • 0.3 cup olive oil extra virgin
  • servings fleur del sel
  •  garlic clove grated peeled
  • teaspoon pepper fresh black finely
  • teaspoon kosher salt
  • tablespoons juice of lime freshly squeezed
  •  lime cut into 4 to 6 wedges
  • ounces butter unsalted cut into pats
  • 0.3 cup vegetable oil

Equipment

  • food processor
  • blender
  • grill

Directions

  1. Keeping the husks attached, peel them back in sections on each ear of corn, and remove the silk. Cover the exposed corn with the husk.
  2. Soak the corn in cold water for 5 to 10 minutes.
  3. Preheat one grate of a well-oiled charcoal or gas grill to medium-high and another to high.
  4. Place the cilantro, lime juice, garlic, salt, and pepper in a small food processor or in a blender and pulse to combine. With the machine running, slowly drizzle in the oils. Alternately the pesto can be combined by hand. Set aside.
  5. Place the corn, still covered by the husk, on the medium-high grate. Cook for 3 minutes, turn to the other side, and cook for 3 minutes.
  6. Remove from the grill, peel back the husk, return to the high grate to mark and lightly char the corn on all sides, turning and jockeying between medium and high as need for 5 to 7 minutes total.
  7. Remove the corn from the grill and brush generously with the pesto. Squeeze lime over the ears and sprinkle with fleur de sel.
  8. Serve with any remaining limes, and pats of butter on the side.
