  • 0.3 teaspoon pepper black freshly ground
  •  ears corn 
  • cup parsley leaves fresh
  •  juice of lime juiced
  • cup greens mixed
  • tablespoons olive oil plus more for brushing
  • 0.3 cup onion diced red finely
  • 0.5 teaspoon salt 
  •  tomatoes diced seeded

Directions

  1. Brush corn with a little oil and place it on the grill for 10 minutes. Once corn is cooked and slightly cooled, cut kernels off and place into a medium bowl.
  2. Add diced tomato, diced red onion, mixed greens, parsley, lime juice, 2 tablespoons olive oil, and season with salt and freshly ground black pepper. Toss to mix well.
