  • 1.3 ounce yeast dry
  • servings pepper black freshly ground
  • cups flour all-purpose ()
  • tablespoon kosher salt plus more for seasoning
  • tablespoon olive oil plus more for brushing

Directions

  1. Pour 2 cups warm water (105°-115°) into thebowl of a stand mixer fitted with a paddle.
  2. Sprinkle yeast over.
  3. Let sit until yeast dissolves, about 10 minutes.
  4. Mix in 1 tablespoon oil.
  5. Add 5 cups flour and 1 tablespoon salt; beat untildough forms, about 1 minute.
  6. Transfer dough onto a floured work surfaceand knead until smooth, adding moreflour by spoonfuls as needed for soft butstill slightly sticky dough, about 5 minutes.
  7. Place dough in a large, lightly oiled bowl;turn to coat. Cover bowl with a kitchentowel and let dough rise in a warm placeuntil doubled in volume, about 1 hour.
  8. Turn dough out onto a floured worksurface. Divide into 8 equal pieces.
  9. Rollinto balls; space 2" apart. Cover with akitchen towel; let rest 15 minutes.
  10. Prepare a grill to medium-high heat.Lightly brush 4 baking sheets with oil.Working with 1 dough ball at a time, rollout into 9" round.
  11. Place 2 dough rounds oneach prepared sheet.
  12. Brush lightly with oil;season with spice blend, salt, and pepper.
  13. Brush grill rack with oil. Working inbatches, place flatbreads spice side downon rack.
  14. Brush with oil, season with saltand pepper, and grill until lightly charredin spots and cooked through, 1–1 1/2 minutesper side.
  15. Transfer to a work surface.
  16. Cutinto wedges.
