  • teaspoons balsamic vinegar 
  • 0.3 teaspoon pepper black divided freshly ground
  • 0.5 cup cooking wine dry red
  • tablespoons basil fresh divided chopped
  • tablespoon thyme leaves fresh chopped
  •  garlic clove minced
  • tablespoon olive oil 
  • 0.3 cup onion finely chopped
  • pound plum tomatoes seeded chopped
  • teaspoon salt divided
  • 24 ounce chicken breast halves boneless skinless

Directions

  1. Heat oil in a medium saucepan over medium heat.
  2. Add onion and garlic; cook 3 minutes or until tender, stirring occasionally. Stir in tomato, wine, vinegar, 1/2 teaspoon salt, and 1/8 teaspoon pepper; bring to a boil. Reduce heat, and simmer 10 minutes or until sauce thickens, stirring occasionally.
  3. Remove from heat; stir in 1 tablespoon basil.
  4. Prepare grill.
  5. Combine thyme, remaining 1 tablespoon basil, remaining 1/2 teaspoon salt, and remaining 1/8 teaspoon pepper in a small bowl. Coat chicken with cooking spray; sprinkle with thyme mixture.
  6. Place chicken on grill rack coated with cooking spray; grill 5 minutes on each side or until done.
  7. Serve with tomato mixture.
