Ingredients

  • tablespoon apple cider vinegar 
  • 0.5 teaspoon pepper black freshly ground
  • cups cherry tomatoes 
  • teaspoon thyme dried
  •  bell pepper green cut into 1-inch pieces
  • 0.3 teaspoon ground allspice 
  • 0.5 teaspoon ground cinnamon 
  • 0.5 teaspoon ground pepper red
  • tablespoons jalapeno minced ( 1)
  • 0.3 teaspoon kosher salt 
  • pound pork tenderloins trimmed cut into 1-inch cubes
  • tablespoon soy sauce low-sodium
  • cup pineapple (1-inch)
  • small onion red cut into 1/2-inch pieces

Directions

  1. Combine jalapeo and next 8 ingredients (through pork) in a large zip-top plastic bag. Seal; marinate in refrigerator 1 1/2 hours, turning bag occasionally.
  2. Prepare grill.
  3. Remove pork from bag; discard marinade. Thread pork, tomatoes, pineapple, bell pepper, and onion alternately onto each of 8 (12-inch) wooden skewers.
  4. Place on a grill rack coated with cooking spray, and grill 10 minutes, turning once.
  5. Sprinkle with salt.
