Ingredients

  • 0.3 cup parsley fresh chopped
  •  garlic cloves pressed
  • 0.5 teaspoon coarsely ground pepper 
  • 0.3 cup juice of lemon 
  • tablespoon lemon rind grated
  • 0.3 cup olive oil divided
  • pounds potatoes red halved
  • 1.5 teaspoons salt

Directions

  1. Bring potatoes and water to cover to a boil in a large Dutch oven over medium-high heat; cook 20 to 25 minutes or until tender.
  2. Drain and toss with 2 Tbsp. olive oil.
  3. Stir together lemon rind, next 5 ingredients, and remaining 2 Tbsp. olive oil.
  4. Coat a cold cooking grate with cooking spray, and place on grill over medium-high heat (350 to 400).
  5. Place potatoes on cooking grate, and grill, covered with grill lid, 5 minutes, turning occasionally. Gently toss hot potatoes with lemon mixture.
  6. Serve immediately or at room temperature.
