Ingredients

  • 1.5 lb salmon fillet skinless cut into 4 serving pieces
  • tablespoons vegetable oil
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • medium optional: lemon cut into 1/8-inch slices ( 12)
  • tablespoons parsley fresh finely chopped

Equipment

  • grill
  • aluminum foil

Directions

  1. Heat gas or charcoal grill.
  2. Cut 4 (18x12-inch) sheets of heavy-duty foil.
  3. Place salmon piece on center of each sheet.
  4. Brush 1/2 tablespoon oil over both sides of each salmon piece.
  5. Sprinkle each piece with 1/8 teaspoon salt and 1/8 teaspoon pepper.
  6. Place about 3 lemon slices flat or overlapping on each piece.
  7. Bring up 2 sides of foil over salmon so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  8. Place packets on grill over medium-low heat. Cover grill; cook 13 to 16 minutes, rotating packets 1/2 turn after about 7 minutes, until salmon flakes easily with fork.
  9. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.
  10. Sprinkle with parsley.
