Ingredients

  • large mushrooms fresh
  •  garlic cloves pressed
  • 0.3 cup juice of lemon 
  • 0.5 cup olive oil 
  • 0.3 teaspoon pepper 
  •  bell peppers red
  • medium size onion red
  • 10 servings salt to taste
  • 0.3 cup lite soy sauce 
  •  bell peppers yellow
  •  baby squash yellow
  •  zucchini

Directions

  1. Remove mushroom stems, and discard; cut mushrooms in half. Diagonally slice squash and zucchini; cut bell peppers and onion into 1-inch strips.
  2. Place vegetables in a large zip-top plastic freezer bag.
  3. Whisk together oil and next 5 ingredients until blended.
  4. Pour over vegetables. Chill at least 30 minutes.
  5. Remove vegetables from marinade, reserving marinade.
  6. Grill vegetables in a grill wok or metal basket, covered with grill lid, on medium-high heat (350 to 40
  7. minutes, stirring occasionally and basting with reserved marinade.
