Ingredients

  • tablespoons butter 
  • 0.3 cup spring onion sliced
  • Dash ground cinnamon 
  • medium nectarines peeled sliced
  •  pork chops smoked boneless
  • Dash salt 
  • large sweet potatoes and into peeled thinly sliced

Equipment

  • aluminum foil

Directions

  1. Heat coals or gas grill for direct heat.
  2. Cut four 18x12-inch pieces of heavy-duty aluminum foil. Spray with cooking spray.
  3. Place one-fourth of the sweet potato slices on one side of each foil piece.
  4. Sprinkle with salt.
  5. Cut butter into small pieces; sprinkle over sweet potato. Top with pork chops and peaches.
  6. Sprinkle with cinnamon.
  7. Fold foil over pork mixture so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
  8. Cover and grill packets 4 to 5 inches from medium heat 20 to 22 minutes or until sweet potatoes and peaches are tender.
  9. Place packets on plates.
  10. Cut large X across top of each packet; fold back foil.
  11. Sprinkle with onions.
