  • 0.5 pound mushrooms fresh chopped
  • tablespoon thyme leaves fresh
  •  lemons thinly sliced
  • 0.3 cup olive oil 
  • 0.5 teaspoon pepper 
  • pound dressed rainbow trout 
  • 0.5 teaspoon salt 
  •  shallots minced
  • 12  thyme sprigs fresh
