Ingredients

  • 0.3 cup juice of lemon 
  • 0.3 cup vegetable oil 
  • tablespoon thyme sprigs dried fresh chopped
  • 0.3 teaspoon salt 
  • 0.3 teaspoon pepper 
  • 0.8 pound scallops 
  • 12 large shells uncooked
  • ounces mushrooms fresh whole
  •  cherry tomatoes 
  • medium zucchini cut into 1-inch slices ( 1 inch in diameter)

Directions

  1. Heat coals or gas grill for direct heat.
  2. Mix lemon juice, oil, thyme, salt and pepper.
  3. Cut scallops in half if over 1 inch in diameter.
  4. Thread scallops, shrimp, mushrooms, tomatoes and zucchini alternately on each of four 10-inch metal skewers.
  5. Brush with lemon juice mixture.
  6. Grill uncovered 4 inches from medium heat 10 to 15 minutes, brushing frequently with lemon juice mixture and turning once, until scallops are white and shrimp are pink and firm.
