  • 0.5 cup apricots diced ( 2)
  • tablespoons butter melted
  • tablespoons mint leaves fresh thinly sliced
  •  garlic clove minced
  •  green onion finely chopped
  • 0.1 teaspoon ground pepper red
  • tablespoon honey 
  • pounds shrimp deveined peeled
  • teaspoons juice of lemon fresh
  • tablespoons juice of lime fresh
  • teaspoon lime rind grated
  •  lime wedges 
  • 0.5 cup nectarines diced ( 1)
  • 0.5 cup plum ripe chopped ( 1)
  • tablespoons onion diced red
  • 0.3 teaspoon salt 
  • tablespoon serrano chile minced seeded
  • 12  cherries sweet pitted halved

Directions

  1. To prepare salsa, combine the first 13 ingredients in a medium bowl; stir well. Cover and chill 1 hour.
  2. Prepare grill.
  3. To prepare shrimp, place butter, 2 teaspoons juice, 1/4 teaspoon salt, garlic, and shrimp in a large bowl; toss to coat. Thread 4 shrimp onto each of 6 (12-inch) skewers.
  4. Place kebabs on a grill rack coated with cooking spray; grill for 3 minutes on each side or until shrimp are done.
  5. Serve with salsa and lime wedges.
  6. Garnish with mint sprigs, if desired.
