  • 0.3 teaspoon pepper black freshly ground
  • tablespoons cider vinegar 
  • 0.3 cup cilantro leaves fresh chopped
  •  garlic cloves minced
  • teaspoon lime rind grated
  • cups mangos diced peeled
  • teaspoon oregano dried
  • medium onion red cut into 1/4-inch-thick slices
  • 2.3 teaspoons salt divided
  •  serrano chiles minced
  • pounds shrimp deveined peeled
  • teaspoons sugar 
  • cups tomatoes seeded chopped

Directions

  1. Prepare grill.
  2. Lightly coat onion slices with cooking spray.
  3. Place onion on grill rack coated with cooking spray; grill 4 minutes on each side. Cool and chop.
  4. Combine onion, mango, 1 teaspoon salt, and next 6 ingredients (through chiles) in a large bowl.
  5. Combine oregano, remaining 1 1/4 teaspoons salt, pepper, shrimp, and garlic in a large bowl, and toss well. Thread shrimp onto skewers.
  6. Place skewers on grill rack coated with cooking spray; grill for 2 minutes on each side or until done.
