  • 0.5 teaspoon pepper black divided

  •  bell peppers red quartered
  • 0.3 cup red wine vinegar 
  • 0.8 teaspoon salt divided
  • pound rump steak boneless lean trimmed
  • small baby squash yellow halved lengthwise
  • small zucchini halved lengthwise

Directions

  1. Prepare grill or broiler.
  2. Sprinkle steak with 1/4 teaspoon salt and 1/4 teaspoon black pepper.
  3. Combine 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, vinegar, and next 5 ingredients (through garlic) in a large zip-top plastic bag. Seal and shake to coat.
  4. Place steak on grill rack or broiler pan coated with cooking spray; cook 4 minutes on each side or until desired degree of doneness.
  5. Let stand 5 minutes; cut steak into 1/4-inch slices.
  6. Place zucchini and squash on grill rack or broiler pan coated with cooking spray; cook for 4 minutes on each side or until tender.
  7. Place bell peppers and onions on grill rack or broiler pan; cook 2 minutes or just until tender.
  8. Coarsely chop vegetables; place in a bowl.
  9. Add pesto; stir gently.
  10. Garnish with oregano, if desired.
