Ingredients

  • cups arugula trimmed
  • cup avocado diced peeled
  • cup cilantro leaves

  • pound flank steak trimmed
  • 8-inch flour tortilla fat-free ()
  •  garlic clove minced
  • tablespoons ground coriander 
  • tablespoons ground cumin 
  • 0.5 cup jalapeno seeded sliced ( 4 peppers)
  • 0.5 teaspoon kosher salt 
  • cup juice of lime fresh ( 8 limes)
  •  lime wedges 
  • 0.5 teaspoon pepper black
  • cups onion red thinly sliced
  • cup tomatoes chopped

Directions

  1. Combine lime juice and steak in a large zip-top plastic bag, and seal bag. Marinate in refrigerator 1 hour, turning bag occasionally.
  2. Prepare grill.
  3. Remove steak from bag; discard marinade.
  4. Combine cumin and next 4 ingredients (cumin through garlic); rub over both sides of steak.
  5. Place steak on a grill rack coated with cooking spray; grill 8 minutes on each side or until desired degree of doneness.
  6. Place on a cutting board; cover loosely with foil.
  7. Let stand 5 minutes.
  8. Cut steak diagonally across grain into thin slices.
  9. Place corn on grill rack coated with cooking spray; grill 8 minutes or until tender, turning occasionally.
  10. Cut kernels from ears of corn; discard cobs.
  11. Heat tortillas according to package directions. Divide steak evenly among tortillas; top each serving with about 1/4 cup corn, 1/4 cup arugula, 1/4 cup onion, 2 tablespoons cilantro, 2 tablespoons tomato, 2 tablespoons avocado, and 1 tablespoon jalapeo. Fold tortillas in half.
  12. Serve with lime wedges.
