Ingredients

  • cups rice cooked
  • 0.5 cup salad dressing 
  • 0.3 cup spring onion chopped
  • 0.8 teaspoon salt 
  • 0.3 teaspoon pepper 
  • ounces water chestnuts drained sliced canned
  • ounces pimientos diced
  •  fish fillet whole
  • 0.3 cup butter melted
  • serving lemon wedges

Directions

  1. Heat coals or gas grill for direct heat. Lightly brush hinged wire grill basket with vegetable oil.
  2. Mix all ingredients except fish, butter and lemon. Stuff fish with rice mixture. Fasten opening with skewers; lace with string.
  3. Place fish in basket.
  4. Grill uncovered 5 inches from medium heat 50 minutes, brushing frequently with butter and turning once, until fish flakes easily with fork. Discard any remaining butter.
  5. Garnish with lemon wedges.
