  • tablespoon olive oil extra virgin 
  • large onion white yellow grated
  • cup corn kernels whole
  • cups milk whole
  • cups water 
  • servings salt and pepper black freshly ground
  • cup coarse-ground grits stone-ground
  • tablespoons butter 
  • ounces parmigiano-reggiano cheese grated
  • tablespoon flat-leaf parsley fresh chopped
  • 0.3 cup green onion greens fresh chopped

Directions

  1. Cook the onion and corn kernels:
  2. Heat the oil in a heavy-bottomed saucepan over medium heat.
  3. Add the grated onion and cook, stirring, until transparent, about 2 minutes.
