Ingredients
- 3 tablespoons butter
- 1 medium onion finely chopped
- 0.5 small bell pepper diced green
- 4 cloves garlic minced
- 1.5 cups shrimp stock
- 2 cups tomatoes crushed
- 1 teaspoon cumin powder
- 1 pound shrimp shelled deveined
- 4 servings salt and pepper to taste
- 1 tablespoon juice of lime
- 0.3 cup parsley fresh chopped

- Melt the butter in a large sauce pan over medium heat.
- Add the onions and peppers, and cook until tender, about 7-8 minutes.
- Add the garlic and cook for one minute more.
- Whisk in the stock, add the tomatoes and cumin powder, and simmer for 20 minutes.
- Add the shrimp and cook for about 5 minutes. Season with salt and pepper to your taste.
- Add the lime juice and parsley.
- Serve over cooked white rice.
