  • tablespoon thyme leaves fresh chopped
  • 0.3 cup pistachios chopped
  • cup rice long-grain uncooked
  • 0.5 teaspoon salt 
  • cups water

Directions

  1. Melt butter in a medium saucepan over medium heat.
  2. Add celery, carrot, and pistachios; saut 5 minutes or until tender.
  3. Add water and salt; bring to a boil.
  4. Add rice and thyme; return to a boil. Cover, reduce heat, and simmer 20 minutes or until most of liquid is absorbed.
  5. Let stand, covered, 10 minutes or until liquid is absorbed.
