Ingredients

  • 0.5 cup cooking wine dry white
  • pound fingerling potatoes red washed
  • sprigs tarragon fresh
  • sprigs thyme leaves fresh
  •  garlic cloves minced
  • pint grape tomatoes halved
  • pounds pacific halibut filets ()
  • tablespoons olive oil 
  •  onion thinly sliced
  • servings pepper freshly ground to taste
  • servings sea salt to taste
  • tablespoons butter unsalted cut into cubes

  • oven

Directions

  1. Bring 4 cups water to a boil in a saucepan over medium-high heat.
  2. Add potatoes, and cook 15 minutes. (Potatoes will not be fully cooked.)
  3. Drain and set aside.
  4. Preheat oven to 32
  5. Heat oil in a large ovenproof skillet over medium heat.
  6. Add onion, and saut 3 to 4 minutes or until soft and slightly brown.
  7. Add garlic and tomato, and saut 2 minutes more.
  8. Place fish in pan, and add reserved parboiled potatoes, thyme, and next 4 ingredients.
  9. Bake, covered, at 325 for 22 to 25 minutes or until fish flakes easily.
  10. Remove from oven, add butter, re-cover, and let stand 3 minutes or until butter melts.
  11. Serve warm.
  12. *Substitute other thick white fish, such as haddock,if desired.
