  •  bay leaf 
  • 0.5 teaspoon pepper black freshly ground
  • 14 ounce canned tomatoes crushed undrained canned
  • cup carrots chopped ( 2)
  • cup celery chopped (3 ribs)
  • cups less-sodium chicken broth fat-free
  • tablespoons basil fresh chopped
  • 0.3 cup flat-leaf parsley fresh chopped
  • tablespoon thyme leaves fresh chopped
  •  garlic cloves minced
  • cup bell pepper green chopped
  • 0.8 teaspoon kosher salt 
  • tablespoon juice of lemon fresh
  • cup onion chopped (1 medium)
  • tablespoon oregano fresh chopped
  • cup bell pepper red chopped
  • ounces ham hock smoked
  • 12 ounce variety seven-bean mix dried
  • 12 ounce variety seven-bean mix dried

Directions

  1. Sort and wash beans; place in a large Dutch oven. Cover with water to 2 inches above beans; cover and let stand 8 hours.
  2. Drain beans.
  3. Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray.
  4. Add onion and garlic to pan; saut 3 minutes.
  5. Add beans, broth, and remaining ingredients except juice; bring to a boil. Cover, reduce heat, and simmer 2 1/2 hours.
  6. Remove ham hock from pan; cool slightly.
  7. Remove ham from bones; finely chop and return meat to pan. Discard bones, skin, and fat. Discard bay leaf. Stir in juice.
