  •  bay leaf 
  • cups black-eyed peas frozen
  • 0.5 cup celery diced
  • tablespoons parsley fresh chopped
  • teaspoon garlic minced
  • tablespoons green onions minced
  • 0.1 teaspoon ground pepper red
  • 0.3 cup orange-baked ham cubed
  • teaspoons hot sauce 
  • teaspoons oregano fresh chopped
  • Dash pepper black freshly ground
  • 0.3 cup bell pepper diced sweet red
  • teaspoon vegetable oil 
  • 0.3 cup vinegar 
  • cups water 
  • teaspoons water

Directions

  1. Bring 2 cups water to a boil in a medium saucepan; add peas and bay leaf. Cover, reduce heat, and simmer 30 minutes.
  2. Drain.
  3. Remove and discard bay leaf.
  4. Combine peas, Orange-
  5. Baked Ham, and next 6 ingredients in a bowl.
  6. Combine vinegar and remaining ingredients in a small bowl. Stir with a wire whisk until blended.
  7. Pour over vegetable mixture; toss gently. Cover and chill at least 2 hours.
