Ingredients

  • cup ham diced cooked
  • 11 ounce mandarin oranges in syrup light undrained canned
  • teaspoons olive oil 
  • 0.7 cup fast-cooking recipe and rice long-grain wild uncooked (such as Uncle Ben's)
  • 0.3 cup onion red chopped
  • cups spinach leaves chopped
  • 0.3 cup cranberries dried sweetened (such as Craisins)
  • 1.5 cups water

Directions

  1. Bring water and rice to a boil in a saucepan. Cover, reduce heat, and simmer 22 minutes. Stir in cranberries; cover, and cook 2 minutes.
  2. Remove from heat.
  3. Let stand, covered, 5 minutes or until liquid is absorbed. Cool.
  4. Combine rice mixture, spinach, and remaining ingredients in a large bowl; toss well. Store in an airtight container in refrigerator.
