Discover the ultimate comfort food experience with these Hard Polenta Cakes, a gluten-free delight that transforms humble cornmeal into a sophisticated, restaurant-quality meal. While the preparation time stretches to about three hours, the magic lies in the slow-cooking process that allows the polenta to develop a rich, creamy texture before being chilled and sliced into golden, crispy cakes. This recipe is a perfect example of how patience pays off, turning a simple pantry staple into an elegant dish perfect for dinner parties or a cozy night in.

The secret to these cakes begins with a boldly seasoned liquid base, where milk, water, bay leaf, and a hint of cayenne pepper create a flavor profile that is both savory and subtly spicy. Unlike standard polenta recipes that might shy away from salt, this method encourages you to season generously upfront, knowing that the polenta itself acts as a "salt eraser" and will absorb the flavors deeply. Once cooked to a smooth, mealy-free consistency, the addition of fresh sage and luxurious mascarpone cheese elevates the dish, adding a creamy richness and an aromatic herbal note that pairs beautifully with the corn.

After chilling the polenta block until firm, slicing it into uniform shapes, and pan-frying them in extra-virgin olive oil, the result is a striking contrast between a crunchy, golden exterior and a tender, cheesy interior. Finished with a dusting of grated Parmigiano-Reggiano, these cakes offer a satisfying crunch and a depth of flavor that feels far more complex than the few minutes it takes to cook them. With a balanced macronutrient profile and a serving size perfect for six, this dish is not only delicious but also incredibly versatile. Whether you are looking to impress guests with a unique vegetarian main course or simply craving a hearty, satisfying meal, these Hard Polenta Cakes are sure to become a new family favorite.

Ingredients

  •  bay leaf
  • pinch cayenne pepper
  • servings kosher salt
  • 0.3 cup mascarpone cheese
  • cup milk
  • servings olive oil extra-virgin
  • tablespoons parmigiano grated
  • cup polenta
  •  sage leaves finely chopped
  • cups water

Equipment

  • frying pan
  • sauce pan
  • whisk
  • plastic wrap
  • wooden spoon

Directions

  1. Watch how to make this recipe.
  2. In a saucepan combine the milk, water, bay and cayenne. Bring the mixture to a boil over low heat and season generously with salt. Take the seasoning to the edge of too salty. To do this you MUST taste as you go. Polenta acts as a salt eraser, if you don't season abundantly here you will never recover from it.
  3. Once the liquid is at a boil and is seasoned appropriately, sprinkle in the polenta whisking constantly. Once the polenta is combined switch over to a wooden spoon and stir frequently until the polenta has become thick. Taste the polenta to see if it has cooked through. If it still feels mealy and grainy, add some more milk or water and cook it to a thick consistency. Repeat this process, as needed, until the polenta feels smooth on your tongue, about 30 minutes.
  4. Remove the bay leaf and stir in the chopped sage and mascarpone.
  5. Line a 7 by 7-inch square pan with plastic wrap.
  6. Pour the polenta into the prepared pan. Cover the top with more plastic smoothed onto the surface of the polenta. Chill in the refrigerator until needed. (All of this can totally be done ahead of time, like yesterday! Cool!)
  7. When ready to use, remove the polenta from the pan and cut into desired shapes. Coat a nonstick saute pan with olive oil and bring to medium-high heat. Once the pan is hot and starting to smoke just a little, add the polenta shapes. Cook the polenta on both sides and finish by sprinkling with a little bit grated Parmigiano.
  8. Transfer to a serving platter and serve while hot.
  9. What a corncake!!!!
