  • ounces pineapple rings crushed drained canned
  • 0.3 cup eggs fat-free
  • tablespoons soybean oil 
  • 1.5 cups flour all-purpose
  • 0.8 cup brown sugar packed
  • 0.5 cup raisins 
  • teaspoon double-acting baking powder 
  • 0.5 teaspoon baking soda 
  • 0.5 teaspoon salt 
  • 0.5 teaspoon ground cinnamon 
  • cup carrots shredded ()
  • cup walnuts chopped

Directions

  1. Heat oven to 350°. Spray loaf pan, 8 1/2x4 1/2x2 1/2 inches, with cooking spray. Discard 3 tablespoons of the pineapple juice.
  2. Mix remaining juice, pineapple, egg product and oil in medium bowl. Stir in remaining ingredients until blended.
  3. Spread batter in pan.
  4. Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
  5. Remove from pan to wire rack. Cool completely, about 1 hour, before slicing.
