Ingredients

  • 0.3 cup t brown sugar dark packed
  • 0.7 cup brown sugar packed
  • tablespoons butter melted
  • tablespoons blackstrap molasses dark
  • large eggs 
  • 0.3 cup flour all-purpose
  • tablespoons flour all-purpose
  • cup gingersnaps crushed ( 20)
  • 0.5 cup granulated sugar 
  • 0.1 teaspoon ground allspice 
  • 0.5 teaspoon ground cinnamon 
  • 0.1 teaspoon ground cloves 
  • 0.1 teaspoon ground ginger 
  • 0.5 cup pecans 
  • 0.8 cup pecans coarsely chopped
  • 0.3 cup powdered sugar 
  •  pie crust dough refrigerated softened
  • 0.5 teaspoon salt 
  • large sweet potatoes and into 
  • 0.3 cup cranberries dried sweetened
  • 0.3 cup water hot
  • cup whipping cream

Directions

  1. Heat oven to 400F. Wash and pierce sweet potatoes.
  2. Place on rimmed baking sheet.
  3. Bake 1 hour to 1 hour 10 minutes.
  4. Remove from oven and let cool to room temperature, about 1 hour.
  5. Cut lengthwise in half; scoop out inside; discard skins. Mash sweet potatoes until no lumps remain.
  6. Combine dried cranberries and hot water. Set aside until ready to put into the streusel.
  7. Turn oven temperature down to 350F.
  8. Unroll and place crust into ungreased deep-dish 9-inch glass pie plate. Crimp edges.
  9. Combine remaining crust ingredients. Press in bottom and about 1/2 inch up side of pie crust.
  10. Bake 10 minutes.
  11. Remove from oven and let cool completely on cooling rack, about 30 minutes.
  12. Beat all filling ingredients except molasses, eggs, cream and sweet potatoes together in large bowl with whisk. Beat in 1 1/2 cups mashed sweet potatoes, molasses and eggs. Beat in cream.
  13. Pour mixture into cooled crust.
  14. Place pie on middle oven rack; place sheet of foil on rack below pie in case of spillover.
  15. Bake about 40 minutes or until filling is set around edges.
  16. Drain cranberries. Stir in remaining streusel ingredients. Gently sprinkle streusel around edge of crust.
  17. Bake for an additional 20 minutes or until set.
  18. Remove from oven and let cool completely on cooling rack, about 3 hours.
