  • tbsp coarse kosher salt

  • 3.5 pounds ground pork 
  • 0.3 cup frangelico such as frangelico
  • 0.8 cup hazelnuts 
  • tablespoon honey 
  • teaspoon mace

Directions

  1. Preheat oven to 37
  2. Spread hazelnuts on a baking sheet and bake until toasted and fragrant, about 10 minutes. Wrap toasted nuts in a cloth and rub to remove as much skin as possible.
  3. Let cool.
  4. Transfer to a food processor and pulse until nuts resemble coarse cornmeal.
  5. Break pork into small chunks and put in a large bowl.
