  • tablespoon canola oil 
  • cups meat from a rotisserie chicken diced cooked
  • 10.8 ounce campbell's® condensed cream of celery soup healthy request® canned
  • tablespoons parsley fresh chopped
  • clove garlic minced
  • cup nonfat milk 
  • large onion minced
  • medium potatoes diced red
  • cup water 
  • cup kernel corn whole
  • large zucchini diced

Directions

  1. Heat the oil in a 4-quart saucepan over medium-high heat.
  2. Add the onion and garlic and cook for 2 minutes, stirring occasionally.
  3. Stir in the soup, milk and water and heat to a boil. Stir in the potatoes, zucchini and corn. Reduce the heat to medium-low. Cook for 35 minutes or until the potatoes are tender, stirring occasionally.
  4. Stir in the chicken and parsley and cook until the mixture is hot and bubbling.
