  • 0.5 teaspoon pepper black freshly ground
  • 15 ounce pumpkin puree canned
  • cup carrots diced
  • cup celery diced
  • cups chicken breast shredded cooked
  • tablespoons olive oil extra virgin 
  • 0.3 cup cilantro leaves fresh finely chopped
  • tablespoons garlic minced
  • 0.3 teaspoon lawry's garlic salt 
  • 0.5 cup heavy cream 
  • 1.5 teaspoons kosher salt 
  • cup onion finely chopped
  • 32 ounces reduced sodium chicken broth 
  • cup cheddar cheese shredded

Directions

  1. Heat olive oil in large dutch oven or pot over medium heat.
  2. Add onion, celery and carrots, stirring and cooking for about 15 minutes, until softened. Stir in garlic and cook for 1 minute.
  3. Add chicken, chicken broth, pumpkin, cream, salt, pepper, garlic salt and cilantro. Stir to combine. When hot, stir in cheese to melt. Taste and season accordingly with additional seasonings if desired.
