Ingredients

  • 0.3 cup torn basil leaves plus additional leaves fresh whole for garnish
  • servings pepper black freshly ground
  • 10 ounce rounds burrata cheese 
  • servings coarse kosher salt 
  • 2.5 pounds heirloom tomatoes 
  • 0.3 cup olive oil extra-virgin
  • teaspoon oregano dried

Directions

  1. Cut tomatoes into wedges and place in large bowl.
  2. Sprinkle with fleur de sel and pepper. Crush oregano between palms to release flavor; add to tomatoes.
  3. Add 1/4 cup basil and olive oil and mix well.
  4. Let stand at room temperature at least 30 minutes and up to 1 hour, stirring occasionally.
  5. Place 1 burrata cheese round in center of each plate. Fan tomatoes around cheese, dividing equally.
  6. Drizzle with dressing from bowl.
  7. Garnish with additional basil leaves and serve.
