Ingredients

  • 0.5 teaspoon pepper black freshly ground
  • teaspoons olive oil extravirgin
  • tablespoon basil fresh thinly sliced
  • ounces heirloom tomatoes peeled seeded
  •  heirloom tomatoes assorted cut into 1/4-inch-thick slices ( 2 pounds)
  • 0.3 teaspoon kosher salt 
  • tablespoon red wine vinegar

Directions

  1. To prepare granita, place vinegar, oil, 1/4 teaspoon salt, and seeded peeled tomato in a blender or food processor; process until smooth.
  2. Place tomato mixture in an 8-inch square baking dish; cover and freeze until firm, stirring twice during first 2 hours.
  3. Remove mixture from freezer; scrape entire mixture with a fork until fluffy.
  4. To prepare salad, arrange tomato slices on a platter.
  5. Sprinkle tomatoes with pepper and 1/4 teaspoon salt. Top with granita.
  6. Sprinkle with basil.
