Ingredients

  • 1.7 cups water 
  • 0.5 cup cilantro leaves fresh packed
  • 0.3 cup mint leaves fresh packed
  •  spring onion chopped
  •  garlic clove 
  • tablespoon vegetable oil 
  • cup jasmine rice 
  • serving coarse salt

Directions

  1. Puree water, cilantro, mint, scallions, and garlic in a blender until smooth.
  2. Heat oil in a small saucepan over high heat.
  3. Add rice, and stir to coat. Cook until slightly toasted, 1 to 2 minutes.
  4. Add herb puree and 1 teaspoon salt. Bring to a simmer. Reduce heat to low, and cook, covered, for 20 minutes.
  5. Remove from heat, and let stand, covered, for 10 minutes. Fluff with a fork before serving.
