Ingredients

  • 0.3 cup basil leaves 
  • 2.5 teaspoons olive oil extravirgin
  •  garlic cloves halved
  • 0.3 cup mint leaves 
  • tablespoons oregano leaves 
  • 0.3 teaspoon pepper 
  • 0.5 teaspoon salt 
  • 1.3 pounds shrimp deveined peeled

Directions

  1. Combine first 6 ingredients in a food processor, and pulse until mixture is coarsely chopped.
  2. Add olive oil, and process until well blended.
  3. Combine herb mixture and shrimp in a large bowl; toss to coat. Cover and marinate shrimp in refrigerator 30 minutes.
  4. Thread shrimp onto 6 (12-inch) skewers.
  5. Prepare grill.
  6. Place skewers on grill rack coated with cooking spray; grill 3 minutes on each side or until done.
