Ingredients

  • 0.3 teaspoon pepper black freshly ground
  • teaspoons parsley fresh chopped
  • tablespoon thyme sprigs fresh chopped
  • tablespoon olive oil 
  • 1.3 pounds potatoes - remove skin red quartered
  • 0.3 teaspoon salt

Directions

  1. Preheat oven to 42
  2. Combine olive oil, thyme, salt, pepper, and potatoes in a medium bowl; toss to coat.
  3. Place potatoes on a jelly-roll pan coated with cooking spray.
  4. Bake at 425 for 28 minutes, stirring once.
  5. Sprinkle with parsley.
