  • 0.3 cup celery finely chopped
  • cups dice chicken skinless cooked
  • tablespoons cilantro leaves fresh chopped
  • tablespoons juice of lime fresh
  • 24 servings lime wedges 
  • 0.3 cup mango chutney chopped
  • 0.5 cup mayonnaise 
  • 0.3 cup bell pepper red finely chopped
  • 84 inch long pieces hearts of romaine lettuce 
  • tablespoons walnuts chopped

Directions

  1. Whisk mayonnaise, chutney, and lime juice in large bowl.
  2. Mix in chicken, walnuts, 2 tablespoons cilantro, celery, and red bell pepper. (Chicken salad can be made 4 hours ahead. Cover and refrigerate.)
  3. Place lettuce leaves on platter. Spoon 1 heaping tablespoonful chicken salad in center of each leaf.
  4. Sprinkle remaining 3 tablespoons cilantro over and serve with lime wedges alongside.
