  • 0.3 teaspoon pepper black freshly ground
  • 5.5 cups cucumber thinly sliced ( 2 large)
  • teaspoons dijon mustard 
  • tablespoons optional: dill fresh coarsely chopped
  • tablespoon parsley fresh coarsely chopped
  •  garlic clove 
  • tablespoons juice of lemon fresh
  • 0.3 cup yogurt plain low-fat
  • 1.5 teaspoons mint leaves coarsely chopped
  • tablespoon olive oil extra-virgin
  • 2.5 cups onion red thinly sliced
  • 0.3 teaspoon salt 
  • 0.3 teaspoon sugar

Directions

  1. Combine the first 11 ingredients in a food processor or a blender, and process until well blended.
  2. Combine the cucumber and onion in a large bowl.
  3. Drizzle with yogurt mixture, and toss to coat.
