Ingredients

  • small baking potatoes thinly sliced
  • cup carrots thinly sliced ( 2 medium)
  • 0.5 teaspoon dillweed dried
  • 24 ounce pacific halibut filets white or any firm fish)
  • teaspoon lemon-herb seasoning salt-free (such as Mrs. Dash)
  • cups onion thinly sliced ( 2 medium)
  • 0.5 teaspoon salt

  • aluminum foil

Directions

  1. Preheat oven to 45
  2. Coat 1 side of 4 (18-inch) squares of heavy-duty aluminum foil with cooking spray.
  3. Combine seasoning, salt, and dillweed.
  4. Layer potato, onion, and carrot slices evenly in centers of coated foil squares.
  5. Sprinkle evenly with seasoning mixture.
  6. Place fish over vegetables. Fold foil over fish and vegetables; crimp edges to seal.
  7. Place packets on a baking sheet.
  8. Bake at 450 for 30 minutes.
  9. Serve immediately.
  10. Tip: Toss together a salad while the fish bakes and dinner is ready as soon as the fish comes out of the oven.
