Ingredients

  • servings rice hot cooked
  • 1.5 teaspoons ginger fresh minced
  •  green onions cut into 1-inch pieces
  • tablespoons hoisin sauce 
  • tablespoons vegetable oil; peanut oil preferred 
  • tablespoon rice wine vinegar 
  • 0.5 teaspoon salt 
  • pound shrimp fresh unpeeled
  • teaspoons sugar divided

Directions

  1. Peel shrimp; devein, if desired.
  2. Stir together hoisin sauce, vinegar, 1 teaspoon sugar, and salt.
  3. Heat oil in a large skillet or wok over high heat 2 minutes.
  4. Add shrimp, and stir-fry 2 minutes.
  5. Add remaining 1 teaspoon sugar, and stir-fry 30 seconds.
  6. Add green onions and ginger, and stir-fry 2 minutes.
  7. Add hoisin sauce mixture, and stir-fry 2 minutes.
  8. Serve over rice.
