Ingredients

  • pound beef tenderloin trimmed
  • 1.5 teaspoons garlic powder 
  • 0.5 teaspoon ground cumin 
  • 0.5 teaspoon ground nutmeg 
  • teaspoon ground pepper red
  • 0.3 cup olive oil 
  • 1.5 teaspoons onion powder 
  • 1.5 teaspoons pepper 
  • sprigs garnishes: rosemary sage sprigs fresh
  • tablespoon salt

Directions

  1. Combine first 7 ingredients.
  2. Rub tenderloin with oil; coat with spice mixture.
  3. Place in a roasting pan; cover and chill 8 hours.
  4. Bake at 500 15 minutes or until browned. Lower temperature to 375; bake for 20 more minutes or until desired degree of doneness.
  5. Let stand 10 minutes. Slice; serve with horseradish mayonnaise.
  6. Garnish, if desired.
