Ingredients

  • 0.5 cup celery finely chopped ( 2 stalks)
  • cups cranberries fresh thawed
  • cup apples i use 2 granny smith apples finely chopped ( 1 medium)
  • 0.3 ounce lemon gelatin sugar-free
  • 0.3 cup measures-like-sugar" calorie-free sweetener 
  • 1.3 cups water boiling

Directions

  1. Place cranberries in a food processor; process 30 seconds or until chopped.
  2. Combine cranberries and sweetener in a large bowl; let stand 30 minutes or until sweetener dissolves.
  3. Combine gelatin and boiling water in a large bowl; stir 2 minutes or until gelatin dissolves. Chill until the consistency of unbeaten egg white.
  4. Stir cranberry mixture, celery, and apple into gelatin mixture.
  5. Pour mixture into a 3-cup mold coated with cooking spray. Cover and chill until firm.
  6. To serve, unmold salad onto a lettuce-lined serving plate, if desired.
